Chocolate Pecan Cookies

Played around with a basic cookie recipe today and came up with these tasty treats. So good, can’t stop eating them! Nomnomnom…

  • 1/4 cup soy milk
  • 1 tbsp flax meal
  • 1 tbsp apple sauce
  • 2 1/4 cups flour
  • 1 tsp bicarbonate of soda
  • 3/4 cup brown sugar
  • 3/4 cup white caster sugar
  • 1/4 cup vegan margarine
  • 1/2 cup coconut oil
  • 1 tsp vanilla
  • 1 cup chocolate chips
  • 1 cup pecans, chopped
  1. Preheat the oven to 175C
  2. Mix together the soy milk, flax and apple sauce in a jug and set aside
  3. In a mixing bowl cream together the sugars, margarine and coconut oil.
  4. Add the vanilla and soymilk mixture and mix until smooth.
  5. Sift in the flour and bicarb and mix together.
  6. Add the chocolate chips and pecans and mix with your hands.
  7. Use a spoon to help roll the dough into small ball shapes, they will expand in the oven! Put onto a baking tray and bake for 15-18 minutes.

These are delicious with a glass of chocolate oatly šŸ™‚
