Easter Chocolatey Noms

It’s been months since my last update and I’ve been feeling crappy about it for ages. I’m at the final few months of my uni course and I’ve never seen so much work before in my life. I barely have any time to eat, let alone cook something delicious and then find the time to type it up and edit photos etc.

I was feeling upset at my lack of Easter chocolate today (which has been my own lazy fault for not getting myself an egg, there’s been tons of vegan easter treats about this year) so I decided to do some baking to cheer myself up.
I made my favourite recipe from Vegan With A Vengeance – Banana Split Chocolate Brownie Puddings:
For the brownie:
  • 115g dark chocolate, chopped
  • 2 large ripe bananas, mashed
  • 5 tbsp vegetable oil
  • 1 cup (250ml) sugar
  • 1 tsp vanilla extract
  • 90g plain flour
  • 25g cocoa powder
  • 1/4 tsp bicarbonate of soda
For the topping:
  • 2 large ripe bananas, mashed
  • 2 tbsp sugar
  • 3 tbsp soy milk
  • 1 tsp vanilla extract
  • 1 tbsp arrowroot powder
  • 1 handful chocolate chips
  1. Preheat the oven at 180C
  2. Melt the chocolate by placing it in a heat proof bowl over a small pan of boiling water
  3. In a mixing bowl combine the mashed bananas, oil and sugar. Add the vanilla and melted chocolate
  4. In a separate bowl mix the flour, cocoa and bicarb. Add the banana mixture and mix until combined. Pour into a baking tray
  5. In a small bowl combine all the topping ingredients and pour over the chocolate mix in the tray. Top with chocolate chips and bake for 30 minutes.

I usually end up under cooking this recipe so that it’s really gooey, infact I was planning to do that today but lost track of time and cooked it for the full 30 minutes. If you want a gooey, chocolatey mess then only bake for 20 minutes and then serve nice and hot.
I finish all my assignments on April 30th, so there should be lots more updates in May!

  1. Glad to see you back again! Your baking looks so good – I love baked banana and chocolate, so this is recipe I should have noticed before… I hope the finals went well – as usual I'm very late in catching up with my favourite blogs as I'm studying too!
