I know I said I’d take the burgers into the monthly taster…but I’m lazy and decided to do something easier instead. Good news is that this means I have a delicious new recipe to share with you lovely people.
This pudding was a huge hit at class tonight. I was scared to tell everyone that it was made from tofu, I’m the only vegan in group and they already think it’s weird. But…most people tried it and everyone who had a bit either came up to comment or asked for the recipe!
- 2 packs of silken tofu
- 6 flat tbsp of cocoa powder (6 syns)
- 3/4 cup sweetener
- 1 tsp vanilla extract
- 2 tsp orange extract
- Blitz the tofu with a hand blender until completely smooth.
- Stir in the cocoa, sweetener and extracts
- Serve or put into the fridge for an hour before serving for a more ‘moussey’ texture.
Total of 6 syns and serves 6-8
I used to make a full fat version of this before SW. If you want to try that just add maple syrup or agave instead of sweetener. I prefer the lower fat version though!
