Vegan Mofo #11: Squash and Coconut Rice Bowl

The best thing about a thai curry for me, is having all the creamy coconut sauce soaked into the rice at the end. Bliss. Whenever I make it at home, I purposefully drain off more sauce from the boys portion so I can have extra in mine. 
This dish is kind of inspired by that. I wasn’t sure what to call it. Mushy rice doesn’t sound that appetising, so I thought rice bowl was a more sophisticated choice…

Squash and Coconut Rice Bowl

  • 1/2 butternut squash
  • 1 cup white rice
  • 1 leek or 5 spring onions
  • 1 tsp minced garlic
  • 2 tsp minced ginger
  • 1 tsp chilli flakes
  • the rind of 1 lemon, and the juice of half of it
  • 1 cup coconut milk
  • 2 handfuls of sliced spring greens
  • 1 cup vegetable stock
  • salt

  1. Heat the oven to 200C. Cut the squash in half and place face down on a baking tray. Pop in the oven for 30-40 minutes until soft.
  2. When the squash is out of the oven and cooled, cover the rice with water in a small pan and bring to the boil. Cook until almost done.
  3. Meanwhile, slice the leek or spring onions. Heat a little oil in a pan and cook until they are slightly browned. Add the garlic, ginger, chilli, some salt and the lemon rind. Cook for a few more minutes.
  4. Add the coconut milk and turn the heat down.
  5. Scoop out the squash from it’s skin into the pan. Use a fork or a potato masher to mash the squash into the sauce until it’s creamy.
  6. Drain the rice and stir into the sauce. Add with it 1/2 of the stock and the spring greens, simmer for 10 minutes on a really low heat.
  7. Squeeze the lemon juice in and stir just before serving.
Serves 4
I topped mine with some smoked tofu that I fried up with a little sweet soy sauce. It was good. The perfect comfort food to eat on a rainy Sunday afternoon. If you think it’s kind of weird that I like to eat mushy rice, then feel free to cut down on the stock and coconut milk if you want a firmer texture.
I served mine with countless episodes of Breaking Bad, but feel free to pick the tv series of your choice.
