Vegan Mofo: Crunchy Topped Cauliflower

Today I bring you the world’s most pointless vegetable side dish. I found this recipe in The Complete Home Cookbook.

A bargain at 99p from my local RSPCA charity shop. This book has over 160 weird and wonderful recipes. But the very best of these are in the vegetable section, where it becomes very obvious very quickly that the writers of this book do not know how to make vegetables exciting. They do know how to make them look really funny though.

Crunchy Topped Cauliflower
A crunchy almond and golden fried breadcrumb topping that brightens up a plain boiled cauliflower

  • 1 large cauliflower
  • 4 tbsp soya butter
  • 4 tbsp finely chopped almonds
  • 4 tbsp breadcrumbs
  1. Remove the leaves and trim the stem from the cauliflower
  2. Place the entire cauliflower in boiling water the right side up. Boil for 12-15 minutes until tender.
  3. Drain and pop on a plate
  4. Melt the soya butter in a small pan and add the almonds and breadcrumbs. Cook for a few minutes until crisp.
  5. Spoon the breadcrumbs over the cauliflower and serve immediately.
Serves 4-6

PAHAHAHAHAHAHA! I used a purple cauliflower for comedy effect. I think it looks even better than the picture. This is such a stupid dish.
It didn’t particularly brighten up my cauliflower, it still tasted like cauliflower just with an added almond, breadcrumb thing. I think cooking them in lots of olive oil with garlic would be nicer but I still wouldn’t present this to dinner guests for fear of being mocked.
It may not have brightened my cauliflower but it did brighten up my day.

If you’d like to try a more normal topping, check out this Easy Peasy Cheesy Topping from Adventures in Mindful Living. Also spotting this uhhmazing Sweet potato and Peanut Burger from Zsu’s Vegan Pantry

  1. I am so glad I didn't have anything in my mouth at the time I read this, because my computer screen would be all messy now.

Thank you for the laugh! I'll be back for more!
