Vegan Mofo #5: Waffle Mac

Best sandwich ever eh? I like this theme and I can definitely waffle-ize it. I’ve got to admit that I didn’t fully come up with this idea myself, it’s heavily inspired by V Revolution in Manchester. I was considering doing this for tomorrows restaurant recreation theme but I didn’t want two similar meals back to back.

V Revolution has an awesome daily menu and even better daily specials. I decided to take one of the original menu burgers and make it into something that would definitely make the specials board. Unfortunately I’m not cool enough to come up with the creative kind of names V Rev can think up, but I’m definitely cool enough to make me a waffle sandwich.
Waffle Mac
For the sesame waffles
  • 1 cup plain flour
  • 1/2 tbsp caster sugar/ maple syrup
  • 2 tsp baking powder
  • 1 tbsp flax meal
  • pinch of salt
  • generous scattering of sesame seeds
  • 1 tbsp oil
  • 1 cup dairy free milk
  1. Grease and preheat the waffle iron
  2. Mix together all the dry ingredients. Add the wet ingredients and stir until combined
  3. Spoon 1/3 cup of the mixture into the hot iron and cook according to the irons instructions.
For the sandwich
  • 4 sesame waffles
  • 4 vegan burgers, I used Vegetarian Choice
  • 4 slices vegan cheese
  • lettuce, chopped
  • fried onions
  • garlic mayonnaise
  • burger sauce (1/2 cup vegan mayo, 1/4 cup tomato ketchup, squeeze of prepared mustard, splash of white wine vinegar, salt and pepper)
  1. To make the burger sauce, just stir all the ingredients together and check for seasoning.
  2. While the waffles are cooking, get the burgers under the grill. When they’re cooked, place a slice of vegan cheese on top and grill until melted.
  3. Spread garlic mayonnaise over one side of one of the waffles. Top with lettuce. Place one of the burgers on top. Put a dollop of burger sauce on top and a sprinkling of fried onions. Place the next burger on top, put another dollop of burger sauce on top and some more fried onions. Spread burger sauce onto another waffle and place sauce down onto the burger.
  4. Repeat for the second burger
Makes 2 burgers
Holy crap. Best sandwich ever. These photos do not do it justice. Unfortunately my flat is terrible for decent lighting.
The sesame seeds in the waffles made them resemble a normal burger bun but the maple syrup gave it that bit of sweetness. I’m not gonna lie, this was a messy eat. I ended up with burger sauce dripping off my fingers and chin but my god was it good.
Don’t miss out the fried onions. I got mine on a random trip to Ikea but they can be found in Asian supermarkets too.
I should have added gherkins, that was my mistake.
I’d like to think this would make V Revolution proud.
