Vegan Mofo #6: Broccoli Cheeze Waffles

Recreate a Restaurant Meal

It didn’t take me long to come up with this one. One of my favourite meals out was at the Berlin creperie Ohlala. I am in love with their Broccoli and Cheese crepes. They’re beautiful. Plus, pancakes are similar to waffles right? I knew this would be easy.
Broccoli Cheeze Waffles
  • 1/2 cup polenta
  • 1/2 cup plain flour
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • 2 tsp baking powder
  • 1 small head of broccoli very finely chopped
  • 1/2 small onion, finely chopped
  • 1/2 cup strong vegan cheeze, grated (I used Redwoods Parmesan)
  • 2 tbsp oil
  • 1/2 tbsp maple syrup
  • 1 1/2 cups dairy free milk
  • extra cheese to top the waffles with (optional)
For the white sauce (optional):

  • 1/2 small onion, finely chopped
  • splash of olive oil
  • 3 large cloves garlic, finely chopped
  • 2 tbsp cornflour
  • 1 cup non dairy milk
  • 1 handful of chopped parsley
  • salt and pepper
  1. First off, get the sauce going if you want to use it. Heat up the olive oil in a pan and fry off the onion until golden
  2. Add the garlic and cook through for a further few minutes
  3. In a jug whisk together the cornflour and the milk. Pour into the pan and stir until thickened.
  4. Before serving add the chopped parsley and season with salt and pepper
  5. Heat up the waffle iron. Mix all the dry ingredients together and then add the wet. Stir until just combined.
  6. Use a 1/3 cup measurement to scoop the mixture into your waffle iron. Cook according to your machines directions.
  7. If you want some extra cheeziness, top with grated cheese, or slice some vegan cheese, place inbetween two waffles and grill until melted.
  8. Pour over the white sauce and eat!
Makes 6 waffles
Oh wow these were good. I think using half flour and half polenta for the mix gave these waffles a nice crisp exterior. I definitely recommend melting some cheese inbetween two waffles! This was so cheesy and so good. Having a sauce made this feel like a proper meal too. although I’m tempted to eat the leftovers for breakfast tomorrow!
